I’m lucky to have a highly skilled culinary team, diverse in culture, from all over the globe. With this team of talent, our menus are diverse in nature, yet also a reflection of Austin’s own “Melting Pot” of cultures and neighborhoods. Even more reason that I place emphasis on finding local and regional sources that helps us ensure that we adhere to Hyatt’s principles of “Food. Thoughtfully Sourced. Carefully Served.”

Hudson was established in 1969. We’re located in the heart of downtown Austin, Texas just down the street from the Texas State Capitol. Hudson Meat Market produces a variety of smoked sausages and meat snacks for food service and retail customers. We also offer processing services to the Texas wild game hunters.
